Surf & Turf Quesadilla

6″ Flour Tortilla               2 each
Prime Rib (shaved)              3 oz.
Sauteed 16/20 shrimp (chopped)  2 oz.
Boursin Cheese (spread on)      3 oz.
Julienne roadted red peppers    .75 oz.
Mixed greens
Citrus Salsa                    1 oz.
Guacamole                       2 oz.

1. Pre assemble quesadilla’s
2. Cook on a flat top till brown, turn over and repeat.
3. Cut into 1/6th
4. Place mixed greens in center of warm pasta plate
5. Arrange triangles of quesadilla in a fan to one side of greens.
6. Place one tablespoon of citrus salsa and guacamole on opposite side of greens.
7. Garnish with chopped parsley.

Get the ball on the ground!

Can you answer this question – what is the difference between a “chip” and a “pitch”? Both shots are used in the short game with a variety of clubs.  While many answers are usually offered, the correct one is simply “air time”. A “chip” shot travels a short distance in the air, then rolls the rest of the way along the ground.  A “pitch” is just the opposite, traveling most of the way in the air with little or no roll after landing.

While everyone wants to hit the super-flop like Tiger and Phil, the reality is the sooner the ball gets on the ground the better.  A pitch is much harder than a chip, and the results will show it!  Next time you are just off the front of a green and the pin is in the back, put your sand wedge away and grab your 7-iron.  Bump the ball onto the green with a swing very much like a putting stroke.  The ball will not go very far in the air, and will then roll right up towards the hole.

With just a bit of practice, this technique should show some immediate results on your scorecard.

Walk The Cove For Cancer Research

The Lodge of Four Seasons is hosting a fundraiser walk for cancer research which will benefit The Ellis Fishcel Cancer Center. The Walk will also preview The Cove Golf Course which will re-open May 1, 2009 after extensive construction. Saturday, April 25 at The Cove Golf Course located across from the main entrance of The Lodge of Four Seasons.

Grand re-opening of The Cove Golf Course

If you are an avid golfer or know any Robert Trent Jones Sr. design fans then this is a great opportunity!  The Cove Course which was Witches Cove has taken on new life.  With a redesign of some holes and bunkers total replacement of the greens and the addition of some forward tees this is the course to play.  As well have added new carts to the inventory with state-of-the art GPS.  Enjoy lunch in the new clubhouse or join your friends on the 5,000 sq. foot deck with your favorite beverage.
