Maria Davis Earns CMP Designation

Congratulations to Maria Davis, Sales Manager for the Lodge of Four Seasons, who has received her Certified Meeting Professional (CMP) designation. The CMP designation recognizes individuals who have achieved the highest standards of meeting professionalism. Currently, over 13,000 individuals in 35 countries have earned the CMP designation.
Maria joined the Lodge of Four Seasons in 2007 and handles the Association and Corporate markets in Central Missouri, Iowa, Nebraska, Arkansas, and Minnesota . She is an active member of the Missouri Society of Association Executives and the Iowa Society of Association Executives. In addition, Maria is also a member of the Meeting Professionals International - Kansas City Chapter where she currently serves as the newsletter co-chair for The KCMPI Times.

Chef Hollingsworth Recipe of the Month

Chicken Oscar
8oz. Chicken Breast
Seasoned Flour 1.5oz.
Asparagus Spears 2 oz.
King Crabmeat 2 oz.
Hollandaise Sauce 3 oz.
Mashed Potato 3 oz.
Medley Vegetable 2 oz.
Baby Carrots 2 oz.
Roll 1 each
Garlic Bread 1 each
Butter 1 oz.
Lemon Crown 1 each
1. Pound out chicken breast
2. Make hollandaise
3. Dredge chicken breast in seasoned flour, shake off access.
4. In a medium/hot sauce pan sear chicken breast then pan roast to completion. (remove and hold)
5. In the same pan add crabmeat and asparagus spears.
6. Place mashed potatoes in the center of pasta plate. Balance chicken breast on potatoes, with the wide end of the lobe facing down.
7. Put crab and asparagus over the chicken breast, top with Hollandaise.
8. Present vegetables on one side of plate and lemon crown on the other.
9. Garnish with chopped parsley.

Please welcome Anand Torres the new manager at The Lodge of Four Seasons, HK’s Steakhouse. Anand was born in Los Angeles, California but then moved to Lake Ozark where he graduated from Osage High School in 1996. A graduate of Rockhurst University with a major in Marketing. Anand gained his Food & Beverage experience starting with Trader Vic’s Palo Alto and Trader Vic, Inc. as assistant GM then moved on to Assistant Food & Beverage Director at the Crowne Plaza Cabana Palo Alto. Most recently Anand had returned home to the lake area to assist with the family business, a very well known establishment at Lake of the Ozarks which is Andre’s at the Lake.

Gayla has lived at the Lake for 15 years and has spent her life enjoying all the area has to offer, having grown up in Jefferson City. Gayla brings 21 years of industry experience. She has a husband, Jeff and a son, Jack age 7. It is her goal to continue to deliver and exceed the expectations of all guests in the tradition of The Lodge of Four Seasons.

The Lodge introduces “The Cove Golf Course” - A new name for optimum game
LAKE OZARK (MO) - After nearly one year of extensive renovations, The Cove Golf Course will re-open to the public on Friday, May 1, 2009.
The Cove, the Robert Trent Jones, Sr. Signature Course formerly known as Witch’s Cove, located directly across from The Lodge of Four Seasons, closed in July 2008 for the renovations. In late 2008, Golf Magazine named Witch’s Cove as one of Missouri’s “top five” courses. This 18-hole, par 71 championship course challenges guests with its rolling greens, 65 bunkers and the signature #13 hole which is now hole #4.
“In our efforts to constantly improve the golf experience of our guests who play golf, we have completed extensive work on the greens, tee boxes and fairways, and have re-routed some of the holes on Witch’s Cove for optimum play,” stated Mark Brown, president of The Lodge of Four Seasons, and eldest son of Peter Brown and Susan Koplar-Brown.
As with The Cove, the Brown family continues to invest money back into their properties and the community to attract visitors and groups to the Lake area. In Spring 2008, the family tore down the old clubhouse building and replaced it with a brand new clubhouse, complete with pro-shop, bar and grill, and spacious patio overlooking the greens to accommodate guests and groups who stay and play The Cove.
“On behalf of my family, we appreciate the efforts of Todd Clark of CE Golf Design in his efforts towards rejuvenating and re-designing The Cove championship course, and are excited to publicly unveil the fantastic results,” said Brown.
The Cove Golf Course will re-open Friday, May 1 with member play in the morning, and public access beginning at noon.

Surf & Turf Quesadilla
6″ Flour Tortilla 2 each
Prime Rib (shaved) 3 oz.
Sauteed 16/20 shrimp (chopped) 2 oz.
Boursin Cheese (spread on) 3 oz.
Julienne roadted red peppers .75 oz.
Mixed greens
Citrus Salsa 1 oz.
Guacamole 2 oz.
1. Pre assemble quesadilla’s
2. Cook on a flat top till brown, turn over and repeat.
3. Cut into 1/6th
4. Place mixed greens in center of warm pasta plate
5. Arrange triangles of quesadilla in a fan to one side of greens.
6. Place one tablespoon of citrus salsa and guacamole on opposite side of greens.
7. Garnish with chopped parsley.

Get the ball on the ground!
Can you answer this question – what is the difference between a “chip” and a “pitch”? Both shots are used in the short game with a variety of clubs. While many answers are usually offered, the correct one is simply “air time”. A “chip” shot travels a short distance in the air, then rolls the rest of the way along the ground. A “pitch” is just the opposite, traveling most of the way in the air with little or no roll after landing.
While everyone wants to hit the super-flop like Tiger and Phil, the reality is the sooner the ball gets on the ground the better. A pitch is much harder than a chip, and the results will show it! Next time you are just off the front of a green and the pin is in the back, put your sand wedge away and grab your 7-iron. Bump the ball onto the green with a swing very much like a putting stroke. The ball will not go very far in the air, and will then roll right up towards the hole.
With just a bit of practice, this technique should show some immediate results on your scorecard.
Walk The Cove For Cancer Research

The Lodge of Four Seasons is hosting a fundraiser walk for cancer research which will benefit The Ellis Fishcel Cancer Center. The Walk will also preview The Cove Golf Course which will re-open May 1, 2009 after extensive construction. Saturday, April 25 at The Cove Golf Course located across from the main entrance of The Lodge of Four Seasons.
Registration begins at 8:00am onsite only
